Avocado & Mango Salad

Top off taco Tuesday with these fresh flavours.

This recipe is twice as nice because it can play double duty as both a salad and a salsa. The smaller your cuts on the mango and avocado (and the riper the fruits), the more ‘salsa’ your dish will become. Portions are also up for grabs with this recipe. I don’t think any proportion of ingredients will make or break the flavours because whatever combination you choose everything comes out fresh and delicious. —CFG


INGREDIENTS:

  • 1 large mango (~1 1/2 cups)

  • 1 large avocado (~1 1/2 cups)

  • 1/4 cup red pepper, chopped

  • 1/4 cup red onion, finely chopped

  • 1/2 tbsp olive oil

  • 1/2 tsp cumin

  • 1 tbsp pineapple juice (or other tropical fruit juice such as orange/mango)

  • 1/4 cup fresh cilantro, roughly chopped


Directions:

  1. In a medium mixing bowl add 1 large avocado, cut into 1/2” cubes and 1 large mango, cut into 1/2” cubes. (Cut smaller for more of a salsa texture.)

  2. Add in 1/4 cup chopped red pepper and 1/4 cup finely chopped red onion. Mix all ingredients together.

  3. To the mixture add 1/2 tbsp of olive oil, 1/2 tsp of cumin, 1 tbsp of pineapple juice, and 1/4 cup of roughly chopped fresh cilantro. Mix all ingredients until fully incorporated and chill until ready to serve.

  4. Serve and enjoy!
