Cheddar Drop Biscuits

The only thing easier than eating these is making them.

Is there anything more comforting than a plate full of biscuits served on the side of your favourite soup or stew? In our house the biscuits often take centre stage and the main becomes the accompaniment.

Honestly, this recipe is beyond easy to make and comes together in about 20 minutes flat— faster than your stew can simmer down to the dinner bell! They also put to shame boxed biscuit mixes because there are zero preservatives and no ingredients you need Google Translate to pronounce. For a family serving I suggest doubling the recipe for sure— I know we always end up eating at least two of these delicious treats each.—CFG


Ingredients

Note: This recipe makes 12 biscuits.

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 2 tbsp chopped chives/green onions

  • 3/4 tsp garlic powder

  • 1/2 tsp ground sea salt

  • 1/4 cup cold butter

  • 1 cup milk or cream

  • 1 cup shredded Cheddar cheese


Directions

  1. Preheat oven to 450F and line a baking sheet with parchment paper. Set aside.

  2. In a large bowl, mix together 2 cups of flour, 1 tbsp of baking powder, 2 tbsp of chopped chives or green onions chives, 3/4 tsp of garlic powder, and 1/2 tsp of ground sea salt.

  3. Next, cut in 1/4 cup of cold butter to the flour mixture and use a fork or your hands to work the butter into the flour with your fingertips until the butter is broken down into small pea-sized lumps.

  4. Add in 1 cup of shredded cheese and 1 cup of milk/cream and stir the mixture until all ingredients are fully moistened. The dough will be quite thick and sticky throughout.

  5. Use two tablespoons to transfer the dough to the baking sheet by using one spoon to pick up a heaping spoonful and the other to scrape the dough off the spoon and onto the sheet.

  6. Bake the biscuits for 12-14 minutes, or until the bottoms are deep golden brown and tops begin to crisp.

  7. Serve and enjoy!


Notes:

  • These biscuits don’t rise or expand so they can be cooked closely together on a single baking sheet

  • Try different combinations to change the flavour profile

    • Cheddar and bacon

    • Havarti and jalapeños

    • Parmesan with rosemary and thyme
