Grilled Street Corn

A BBQ classic hits the street.

I’m not sure I’ll ever grill corn on the cob again without levelling it up with this easy and delicious add-on.

Fresh ingredients are key to this recipe and make for a wonderful addition to any barbecue meal.—CFG


Ingredients

  • 4-6 ears of fresh corn, husked and trimmed

  • ¼ cup mayonnaise

  • ¼ cup sour cream/Greek yogurt

  • ½ cup finely crumbled feta

  • 1 clove garlic, minced

  • 1 tsp smoked paprika

  • 1 tbsp fresh lime juice (about ½ a lime)

  • 3-4 tbsp finely chopped fresh cilantro

  • Salt and pepper to taste


Directions

  1. Grill the corn over medium-high heat in the barbecue, turning occasionally until it is slightly charred and cooked through (about 10–12 minutes).

    You can also roast the ears in a 400°F oven directly on the rack or on a baking sheet for 25–30 minutes, turning occasionally.

  2. While the corn is cooking, add together in a small mixing bowl ¼ cup of mayonnaise, ¼ cup of sour cream/Greek yogurt, ½ cup of finely crumbled feta, 1 clove of minced garlic, 1 tsp of smoked paprika, 1 tbsp of fresh lime juice (about ½ a lime), and a pinch of salt and pepper.

  3. Mix the ingredients together until fully incorporated and set aside.

  4. Once the corn is nearly cooked, generously slather the creamy mixture over the corn and cook for 1-2 minutes.

  5. Repeat and layer on the mixture to your liking, then plate and sprinkle with the finely crumbled feta

  6. Cheese and chopped cilantro. Finish the corn with a squeeze of fresh lime juice.

  7. Serve and enjoy!
