Rainbow Blondies

Sweet treats with enough colour to brighten any day.

No matter how many times I make these rainbow blondies, they all always bring a smile to my face with their vibrant colour and sweet, chocolatey crunch. Their soft texture and golden brown sugar taste is perfectly complemented by the rich walnuts and keeps you coming back for just one more piece time and again.

These treats are delicious on their own and also go great with an after dinner latte or even a bowl of rich vanilla ice cream. However you enjoy these blondies, be sure to have plenty on hand for everyone. — CFG.


Ingredients:

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/8 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup chopped walnuts

  • 1/3 cup butter, melted

  • 1 cup packed brown sugar

  • 1 egg, beaten

  • 1 tbsp vanilla extract

  • 1/3 cup candy-coated chocolate covered sunflower seeds


Directions:

  1. Preheat oven to 350°F

  2. In a medium mixing bowl sift together 1 cup of all purpose flour, 1/2 tsp of baking powder, and 1/8 tsp baking soda. Stir in 1/2 tsp of salt and set aside.

  3. In a microwave safe bowl, melt 1/3 cup of butter. Cool slightly and then add 1 cup of packed brown sugar, 1/2 cup of roughly chopped walnuts and stir until completely mixed.

  4. In a large mixing bowl/stand mixer add 1 egg and mix together with 1 tbsp of vanilla extract. Add in the brown sugar/butter mixture until ingredients are fully blended.

  5. Slowly add in the flour mixture, mixing all ingredients just until combined.

  6. Transfer the batter to an 8 x 8” greased pan. (You can also skip the grease by lining the pan with parchment paper.) Sprinkle 1/3 cup of candy-coated chocolate covered sunflower seeds on top of the batter and lightly press them down.

  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  8. Let the blondies cool completely, then remove from pan. Cut into desired size, big or small.

  9. Serve and enjoy!
